It works the same, leaving the portions ready or the instructions clear. With home-cooked food it's worth leaving it portioned and refrigerated: that's what prevents mistakes with amounts.

What happens if they don't eat?

You're told the same day. An animal skipping one meal may be nothing — when their usual routine changes, it's common on the first day. Two days running is reason to call the owner and ask how to proceed.

Does it include cleaning bowls and changing the water?

Yes. The water is changed, never topped up: a bowl topped up for days builds up the grime that makes a cat stop drinking.
